- 3/4 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 2 tablespoons key lime juice (or regular lime juice)
- 1 tablespoon lime zest
- 1 1/2 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon baking powder
- 1/4 teaspoon salt
- Lime Glaze:
- 1 cup powdered sugar
- 1–2 tablespoons key lime juice
- 1 teaspoon lime zest
Instructions
- Preheat your oven to 350°F (180°C). Line a baking sheet with parchment paper.
- Cream together the softened butter and sugar until light and fluffy.
- Add the egg, vanilla extract, lime juice, and lime zest. Mix until smooth.
- In another bowl, whisk together the flour, baking soda, baking powder, and salt.
- Add dry ingredients to the wet mixture and mix until combined.
- Scoop dough onto the baking sheet, spacing evenly.
- Bake for 9–11 minutes, until edges are lightly golden.
- Let cookies cool completely.
- Make the Lime Glaze: Mix powdered sugar, lime juice, and zest until smooth.
- Drizzle or dip cookies in the glaze. Let set before serving.
Notes
For extra lime flavor, add more zest to the dough or glaze. Store cookies in an airtight container for up to 4 days. These cookies also freeze beautifully for up to 2 months.
