- 8 small flour or corn tortillas
- 1/2 lb cooked corned beef, shredded or chopped
- 1 cup green cabbage, shredded
- 1/4 cup carrots, shredded
- 2 tbsp unsalted butter
- 1/4 cup sour cream or Greek yogurt
- 1 tbsp Dijon mustard
- 1 tsp apple cider vinegar
- Salt and black pepper, to taste
- Optional: chopped parsley or chives for garnish

- In a small bowl, mix sour cream, Dijon mustard, apple cider vinegar, salt, and pepper to make the sauce. Set aside.
- Heat butter in a skillet over medium heat. Sauté shredded cabbage and carrots for 3–4 minutes until slightly softened. Season with salt and pepper.
- Warm tortillas in a dry skillet or microwave.
- Assemble tacos: layer sautéed cabbage and carrots, then add corned beef.
- Drizzle with mustard sauce and garnish with parsley or chives.
- Serve immediately and enjoy!
Notes
You can add shredded cheese or a dash of hot sauce for extra flavor. For a vegetarian version, substitute corned beef with sautéed mushrooms or chickpeas.
