- 4 medium zucchinis, halved lengthwise and scooped out
- 1 lb ground beef
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 cup diced tomatoes (canned or fresh)
- 1/2 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 1 tsp Italian seasoning
- Salt and pepper, to taste
- Olive oil, for cooking
- Fresh parsley or basil, for garnish (optional)
Instructions
- Preheat oven: Preheat oven to 375°F (190°C).
- Prepare zucchini: Halve zucchinis lengthwise and scoop out the centers, leaving about 1/4-inch thick shells. Set the scooped flesh aside.
- Cook filling: Heat olive oil in a skillet over medium heat. Add onion and garlic; sauté until softened. Add ground beef and cook until browned. Stir in diced tomatoes, Italian seasoning, salt, and pepper. Cook 3–5 minutes until flavors meld.
- Combine filling: Chop reserved zucchini flesh and stir into the beef mixture. Cook another 2 minutes.
- Stuff zucchini: Place zucchini halves in a baking dish and fill with the beef mixture. Sprinkle mozzarella and Parmesan cheese on top.
- Bake: Bake for 20–25 minutes until zucchini is tender and cheese is melted and bubbly.
- Garnish & serve: Garnish with fresh herbs if desired and serve warm.
Notes
For a lighter version, substitute ground turkey or chicken. These boats reheat well and make great leftovers for lunch.
