This Easy Cucumber Caprese Salad is a crisp, refreshing take on a classic. Juicy tomatoes, creamy mozzarella, crunchy cucumber, and fresh basil are tossed with a tangy balsamic vinaigrette for a perfect summer side.

- 1 large cucumber, thinly sliced (or 2 small Persian cucumbers)
- 1 cup cherry tomatoes, halved
- 1 cup mozzarella balls (bocconcini or ciliegine), halved
- 1/4 cup fresh basil leaves, torn or chiffonade
- 2 tablespoons balsamic vinegar (or balsamic glaze for drizzling)
- 1 tablespoon olive oil
- Salt and black pepper, to taste
Instructions
- Prep the Veggies: Slice the cucumber and halve the cherry tomatoes and mozzarella balls. Tear or thinly slice the basil.
- Combine Ingredients: In a large bowl, toss together cucumber, tomatoes, mozzarella, and basil.
- Dress the Salad: Drizzle with olive oil and balsamic vinegar. Season with salt and pepper to taste. Toss gently to combine.
- Chill & Serve: Chill for 10–15 minutes before serving, or enjoy immediately. Optional: drizzle with balsamic glaze for extra flavor.
Notes
Best served fresh, but can be prepped a few hours in advance. Add avocado slices or red onion for a twist. Use heirloom tomatoes for extra color and flavor.
