  • 1 cup heavy cream (or half-and-half)
  • 1/2 cup shredded cheddar cheese
  • 4 slices cooked bacon, crumbled (optional)
  • 2 tbsp unsalted butter
  • 1 tsp salt (to taste)
  • 1/2 tsp black pepper
  • 1/2 tsp smoked paprika
  • 2 tbsp chopped fresh chives (for garnish)

Instructions

  1. Place potatoes, onion, garlic, butter, salt, pepper, and paprika into a slow cooker.
  2. Pour in chicken broth and stir to combine. Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until potatoes are tender.
  3. Use a potato masher or immersion blender to partially mash the soup for a creamy texture, leaving some chunks.
  4. Stir in milk, heavy cream, and cheddar cheese. Cook for an additional 15–20 minutes until warmed through and cheese is melted.
  5. Serve hot, topped with crumbled bacon and fresh chives if desired.

Notes

For a lighter version, swap heavy cream for evaporated milk. You can also add diced carrots or celery for extra flavor and nutrition.
