- 6 medium russet potatoes, peeled and diced
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 3 cups chicken broth (or vegetable broth)
- 1 cup milk
- 1 cup heavy cream (or half-and-half)
- 1/2 cup shredded cheddar cheese
- 4 slices cooked bacon, crumbled (optional)
- 2 tbsp unsalted butter
- 1 tsp salt (to taste)
- 1/2 tsp black pepper
- 1/2 tsp smoked paprika
- 2 tbsp chopped fresh chives (for garnish)
Instructions
- Place potatoes, onion, garlic, butter, salt, pepper, and paprika into a slow cooker.
- Pour in chicken broth and stir to combine. Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until potatoes are tender.
- Use a potato masher or immersion blender to partially mash the soup for a creamy texture, leaving some chunks.
- Stir in milk, heavy cream, and cheddar cheese. Cook for an additional 15–20 minutes until warmed through and cheese is melted.
- Serve hot, topped with crumbled bacon and fresh chives if desired.
Notes
For a lighter version, swap heavy cream for evaporated milk. You can also add diced carrots or celery for extra flavor and nutrition.
