Description

This easy crockpot mushroom soup is creamy, flavorful, and made with minimal effort. A comforting soup that’s perfect for busy weeknights or cozy weekends.


Ingredients

  • 500 g (1 lb) mushrooms, sliced
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups vegetable broth (or chicken broth)
  • 1 cup heavy cream (or half-and-half)
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 1 tsp dried thyme (or 2 tsp fresh thyme leaves)
  • 1 bay leaf
  • Salt and black pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Add mushrooms, onion, garlic, broth, thyme, and bay leaf to the crockpot.
  2. Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours until vegetables are tender.
  3. In a small pan, melt butter and whisk in flour to make a roux. Stir into the soup to thicken.
  4. Remove the bay leaf. Stir in cream and season with salt and pepper.
  5. Garnish with fresh parsley and serve warm.

Notes

For a smoother soup, blend half the mixture with an immersion blender before adding the cream. You can also add wild mushrooms for richer flavor.
