Description
This easy crockpot mushroom soup is creamy, flavorful, and made with minimal effort. A comforting soup that’s perfect for busy weeknights or cozy weekends.
Ingredients

- 500 g (1 lb) mushrooms, sliced
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 4 cups vegetable broth (or chicken broth)
- 1 cup heavy cream (or half-and-half)
- 2 tbsp butter
- 2 tbsp all-purpose flour
- 1 tsp dried thyme (or 2 tsp fresh thyme leaves)
- 1 bay leaf
- Salt and black pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Add mushrooms, onion, garlic, broth, thyme, and bay leaf to the crockpot.
- Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours until vegetables are tender.
- In a small pan, melt butter and whisk in flour to make a roux. Stir into the soup to thicken.
- Remove the bay leaf. Stir in cream and season with salt and pepper.
- Garnish with fresh parsley and serve warm.
Notes
For a smoother soup, blend half the mixture with an immersion blender before adding the cream. You can also add wild mushrooms for richer flavor.
