- 2 lbs boneless, skinless chicken breasts or thighs
- 2 cups frozen mixed vegetables (peas, carrots, corn, green beans)
- 1 small onion, diced
- 3 cloves garlic, minced
- 1 can (10.5 oz) cream of chicken soup
- 1 cup chicken broth
- 1/2 cup milk or cream
- 1 tsp dried thyme
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp paprika
- Optional: refrigerated pie crust or biscuit topping

- Place chicken, vegetables, and onion in the crockpot.
- Add garlic, cream of chicken soup, chicken broth, milk, thyme, salt, pepper, and paprika. Stir to combine.
- Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours until chicken is tender.
- Shred chicken using two forks and stir into the sauce.
- Optional: Top with pie crust or biscuit dough and cook on HIGH for 30–40 minutes until golden and cooked through.
- Serve warm and enjoy!
Notes
For a thicker filling, mix 1–2 tbsp cornstarch with a little water and stir in during the last 30 minutes of cooking.
