Description
This Easy Crockpot Chicken Breast recipe is a no-fuss, juicy, and versatile way to prepare chicken. Perfect for meal prep or busy weeknight dinners, this simple slow cooker method yields tender chicken that’s great served over rice, in salads, wraps, or tacos.
Ingredients
Scale
- 2 lbs boneless, skinless chicken breasts
- 1/2 cup low-sodium chicken broth
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp smoked paprika
- 1/2 tsp dried thyme or Italian seasoning
- Salt and black pepper, to taste
- 1 tbsp olive oil
- Lemon wedges and chopped parsley (for serving, optional)
Instructions
- Season the chicken: Rub chicken breasts with olive oil, then season both sides with garlic powder, onion powder, paprika, thyme, salt, and pepper.
- Assemble in crockpot: Pour chicken broth into the bottom of the slow cooker. Add the seasoned chicken breasts on top.
- Cook: Cover and cook on low for 4–5 hours or high for 2–3 hours, until chicken is cooked through and reaches 165°F internally.
- Rest and slice: Let the chicken rest for 5 minutes before slicing or shredding.
- Serve: Enjoy with your favorite side dishes, or shred for tacos, sandwiches, or salads.
Notes
Use the leftover broth as a light gravy or base for soup. For extra flavor, add sliced onions or lemon slices to the crockpot. Shredded chicken can be stored for up to 4 days in the fridge or frozen for later use.
