  • 2 lbs boneless, skinless chicken breasts
  • 1 1/2 cups uncooked long-grain white rice
  • 3 cups chicken broth
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup milk
  • 2 cups broccoli florets
  • 2 cups shredded cheddar cheese
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt and pepper to taste

  1. Place chicken in the bottom of the crockpot.
  2. Add rice, chicken broth, cream of chicken soup, milk, garlic powder, onion powder, salt, and pepper.
  3. Stir gently to combine.
  4. Cover and cook on LOW for 4–5 hours or HIGH for 2–3 hours.
  5. Remove chicken, shred it, and return to the crockpot.
  6. Stir in broccoli and shredded cheese.
  7. Cover and cook an additional 20–30 minutes until broccoli is tender and cheese is melted.
  8. Stir well and serve hot.

Notes

Use rotisserie chicken for faster prep. For extra creaminess, add a little sour cream or cream cheese before serving.
