This Easy Crockpot Cheeseburger Soup is creamy, cheesy, and packed with ground beef, potatoes, and flavorful vegetables. A comforting one-pot meal perfect for chilly days.

- 1 lb ground beef
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 cups beef broth
- 4 medium potatoes, peeled and diced
- 2 cups shredded cheddar cheese
- 1 cup milk or unsweetened almond milk
- 1/2 cup sour cream or Greek yogurt
- 1 tsp Worcestershire sauce
- 1 tsp Dijon mustard
- Salt and black pepper to taste
- Optional: chopped green onions for garnish
Instructions
- Brown the ground beef in a skillet over medium heat. Drain excess fat and transfer to the crockpot.
- Add chopped onion, garlic, potatoes, and beef broth to the crockpot.
- Cook on low for 6–7 hours or high for 3–4 hours until potatoes are tender.
- Stir in shredded cheddar cheese, milk, sour cream, Worcestershire sauce, and Dijon mustard until smooth and creamy.
- Season with salt and pepper to taste.
- Serve hot, garnished with chopped green onions if desired.
Notes
For a lighter version, use lean ground turkey and low-fat cheese. This soup can be made a day ahead and reheats beautifully.
