- 2 tbsp butter
- 1 tbsp olive oil
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 3 tbsp all-purpose flour
- 4 cups vegetable or chicken broth
- 1 cup heavy cream (or half-and-half)
- 1/2 cup whole milk
- 1 tsp fresh thyme (or 1/2 tsp dried thyme)
- Salt and black pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Heat butter and olive oil in a large pot over medium heat. Add onions and cook until softened, about 5 minutes.
- Add garlic and mushrooms, cooking until tender and golden, about 8 minutes.
- Sprinkle in flour and stir until vegetables are coated.
- Gradually whisk in broth and bring to a gentle boil. Reduce heat and simmer for 10 minutes.
- Stir in cream and milk, cooking for 5 minutes until the soup thickens.
- Season with thyme, salt, and pepper. Garnish with parsley and serve warm.
Notes
For an ultra-smooth texture, blend the soup with an immersion blender before adding cream. Swap heavy cream with coconut milk for a dairy-free option.
