- 1 lb ground beef or Italian sausage
- 1 small onion, diced
- 3 cloves garlic, minced
- 4 cups chicken or beef broth
- 1 can (14.5 oz) diced tomatoes
- 1 can (8 oz) tomato sauce
- 1 tsp dried oregano
- 1 tsp dried basil
- Salt and pepper, to taste
- 6 oz lasagna noodles, broken into pieces
- 1/2 cup ricotta cheese
- 1/2 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- Fresh basil or parsley, chopped (for garnish)

- Sauté meat and aromatics: Heat olive oil in a large pot over medium heat. Add ground beef and cook until browned. Drain excess fat. Add onion and cook 3–4 minutes, then add garlic and cook 30 seconds.
- Add liquids and seasonings: Stir in broth, diced tomatoes, tomato sauce, oregano, basil, salt, and pepper. Bring to a simmer.
- Cook pasta: Add broken lasagna noodles and cook 10–12 minutes until tender.
- Add cheeses: Stir in ricotta, mozzarella, and Parmesan until creamy and well combined.
- Serve: Ladle soup into bowls and garnish with fresh basil or parsley.
Notes
For extra flavor, use Italian sausage instead of ground beef. You can also top with more mozzarella and Parmesan before serving. Store leftovers in the fridge for up to 3 days.
