- 1 lb fresh strawberries, hulled and sliced
- 1/4 cup granulated sugar
- 2 cups all-purpose flour
- 1/4 cup granulated sugar (for shortcakes)
- 1 tbsp baking powder
- 1/2 tsp salt
- 1/2 cup cold unsalted butter, cubed
- 2/3 cup milk
- 1 tsp vanilla extract
- 1 cup heavy cream
- 2 tbsp powdered sugar (for whipped cream)

- Mix strawberries with 1/4 cup sugar; let sit 20–30 minutes.
- Preheat oven to 425°F (220°C).
- In a bowl, whisk flour, 1/4 cup sugar, baking powder, and salt.
- Cut in cold butter until mixture resembles coarse crumbs.
- Stir in milk and vanilla until just combined.
- Drop dough onto a baking sheet to form 8 shortcakes.
- Bake 12–15 minutes until golden brown; cool slightly.
- Whip cream with powdered sugar until soft peaks form.
- Split shortcakes, layer with strawberries and whipped cream, and serve.
Notes
Add lemon zest to strawberries for extra flavor. Shortcakes can also be toasted for added texture.
