  • 1 lb fresh strawberries, hulled and sliced
  • 1/4 cup granulated sugar
  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar (for shortcakes)
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1/2 cup cold unsalted butter, cubed
  • 2/3 cup milk
  • 1 tsp vanilla extract
  • 1 cup heavy cream
  • 2 tbsp powdered sugar (for whipped cream)

  1. Mix strawberries with 1/4 cup sugar; let sit 20–30 minutes.
  2. Preheat oven to 425°F (220°C).
  3. In a bowl, whisk flour, 1/4 cup sugar, baking powder, and salt.
  4. Cut in cold butter until mixture resembles coarse crumbs.
  5. Stir in milk and vanilla until just combined.
  6. Drop dough onto a baking sheet to form 8 shortcakes.
  7. Bake 12–15 minutes until golden brown; cool slightly.
  8. Whip cream with powdered sugar until soft peaks form.
  9. Split shortcakes, layer with strawberries and whipped cream, and serve.

Notes

Add lemon zest to strawberries for extra flavor. Shortcakes can also be toasted for added texture.
