- 1 1/2 cups (300g) brown sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 2 cups (260g) all-purpose flour
- 1 teaspoon baking powder
- 1 1/2 teaspoons ground cinnamon
- 1/2 teaspoon salt
- Cinnamon Sugar Topping:
- 1/4 cup (50g) granulated sugar
- 1 teaspoon ground cinnamon
Instructions
- Preheat oven to 350°F (175°C). Line a baking pan with parchment paper.
- Whisk together the melted butter and brown sugar until smooth.
- Add the eggs and vanilla and mix until fully combined.
- Stir in the flour, baking powder, cinnamon, and salt. Mix just until combined—do not overmix.
- Spread the batter evenly in the prepared baking pan.
- In a small bowl, mix together the granulated sugar and cinnamon for the topping.
- Sprinkle the cinnamon sugar mixture evenly over the batter.
- Bake for 25–30 minutes, until the edges are set and lightly golden but the center remains soft.
- Let cool completely before slicing for the cleanest bars.
Notes
For extra warm flavor, add a pinch of nutmeg to the batter. These blondies freeze well for up to 2 months. Add white chocolate chips, chopped pecans, or a swirl of caramel for fun variations!
