- 4 cups chicken broth
- 2 cups cooked, shredded chicken
- 1 can (14 oz) diced tomatoes
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup corn (fresh, canned, or frozen)
- 1 cup shredded cheddar cheese (optional for creaminess)
- Salt and pepper, to taste
- Optional toppings: tortilla strips, avocado, cilantro, sour cream, extra cheese
Instructions
- Heat olive oil in a large pot over medium heat. Sauté onion, garlic, and jalapeño until softened.
- Add chili powder, cumin, and smoked paprika; cook 1 minute.
- Stir in chicken broth, diced tomatoes, beans, and corn. Bring to a boil.
- Add shredded chicken and reduce heat; simmer 15–20 minutes for flavors to meld.
- Optional: stir in shredded cheese for a creamy finish.
- Season with salt and pepper, and serve hot with tortilla strips and toppings.
Notes
This soup can be made in advance and tastes even better the next day. Adjust spice level by adding extra jalapeño or a pinch of cayenne.
