Description

This Easy Chicken Lo Mein is a quick, flavorful weeknight dinner made with tender chicken, fresh vegetables, and a savory homemade stir-fry sauce. Better than takeout and ready in under 30 minutes!


Ingredients

  • 8 oz lo mein noodles (or spaghetti)
  • 1 lb chicken breast, thinly sliced
  • 2 tbsp vegetable oil
  • 1 cup shredded carrots
  • 1 red bell pepper, sliced
  • 1 cup shredded cabbage
  • 3 green onions, sliced
  • 3 cloves garlic, minced
  • 1 tsp fresh ginger, grated
  • Sauce:
  • 1/4 cup low-sodium soy sauce
  • 2 tbsp oyster sauce
  • 1 tbsp hoisin sauce
  • 1 tbsp sesame oil
  • 1 tsp sugar
  • 1/4 cup chicken broth (optional for thinner sauce)

Instructions

  1. Cook lo mein noodles according to package directions. Drain and set aside.
  2. In a small bowl, whisk together soy sauce, oyster sauce, hoisin sauce, sesame oil, sugar, and chicken broth.
  3. Heat oil in a large skillet or wok over medium-high heat. Add chicken and cook until browned and cooked through, about 5–6 minutes.
  4. Add garlic, ginger, carrots, bell pepper, and cabbage. Stir-fry for 3–4 minutes until veggies are tender-crisp.
  5. Add cooked noodles and pour the sauce over everything. Toss well to combine.
  6. Stir in green onions, cook for 1 more minute, then remove from heat.
  7. Serve hot and enjoy your homemade takeout-style lo mein!

Notes

For extra protein, add shrimp or tofu. You can also switch up the veggies with broccoli, snap peas, or mushrooms. Double the sauce if you prefer extra saucy lo mein!
