- 1 lb ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 packet taco seasoning
- 1/2 cup water
- 8 flour or corn tortillas
- 1 can (10 oz) red enchilada sauce
- 1 1/2 cups shredded cheddar or Mexican-blend cheese
- 1 tbsp olive oil
- Optional toppings: sour cream, green onions, cilantro

- Preheat oven: Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
- Cook beef: Heat olive oil in a skillet over medium heat. Cook ground beef and onion until browned. Add garlic and cook 1 minute. Drain excess fat.
- Season: Stir in taco seasoning and water. Simmer 2–3 minutes until thickened.
- Assemble enchiladas: Spoon beef mixture into tortillas, roll up, and place seam-side down in baking dish.
- Add sauce & cheese: Pour enchilada sauce evenly over tortillas and sprinkle with cheese.
- Bake: Bake uncovered for 20–25 minutes until cheese is melted and bubbly.
- Serve: Garnish with desired toppings and serve warm.
Notes
You can substitute ground turkey or chicken if preferred. These enchiladas freeze well—just assemble, cover, and freeze before baking.
