- 1 box vanilla or white cake mix (plus ingredients listed on box)
- 1 cup heavy cream
- 8 oz mascarpone or cream cheese, softened
- 1/2 cup powdered sugar
- 1 tsp vanilla extract
- 2 cups mixed fresh berries (strawberries, blueberries, raspberries, blackberries)
- Optional: berry jam for layering
Instructions
- Preheat oven and bake the cake layers according to the box instructions. Let cool completely.
- In a large bowl, whip the heavy cream until soft peaks form. In a separate bowl, beat mascarpone (or cream cheese) with powdered sugar and vanilla until smooth.
- Fold the whipped cream into the cheese mixture to create a fluffy Chantilly frosting.
- To assemble, spread a layer of frosting and a spoonful of berry jam between the cake layers. Top with more frosting and fresh berries.
- Chill for at least 30 minutes before slicing for a clean finish. Serve cold and enjoy!
