- 3 ripe bananas, mashed
- 2 eggs
- 1/4 cup honey or maple syrup
- 1 teaspoon vanilla extract
- 1 1/2 cups oat flour (or all-purpose flour)
- 1/2 cup protein powder (vanilla or unflavored)
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon cinnamon (optional)
- Pinch of salt
- 1/4 cup chopped nuts or chocolate chips (optional)
Instructions
- Preheat Oven and Prepare Pan: Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease it.
- Mix Wet Ingredients: In a large bowl, mash the bananas. Add eggs, honey, and vanilla extract. Mix until combined.
- Combine Dry Ingredients: In another bowl, whisk together oat flour, protein powder, baking powder, baking soda, cinnamon, and salt.
- Combine Wet and Dry: Add the dry ingredients to the wet and stir just until combined. Fold in nuts or chocolate chips if using.
- Fill Muffin Tin: Divide the batter evenly into the muffin cups.
- Bake: Bake for 18-22 minutes or until a toothpick inserted in the center comes out clean.
- Cool and Serve: Let muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
Notes
Don’t overmix the batter to keep muffins light and fluffy. You can swap protein powder with your favorite type and adjust sweetness to taste.
