- 2 lbs boneless, skinless chicken breasts or thighs
- 1 cup teriyaki sauce (store-bought or homemade)
- ¼ cup low-sodium soy sauce
- ¼ cup honey or brown sugar
- 2 cloves garlic, minced
- 1 tbsp fresh ginger, grated (or 1 tsp ground ginger)
- 1 tbsp rice vinegar
- 1 tbsp cornstarch + 2 tbsp water (optional, for thickening)
- Optional garnish: sesame seeds, sliced green onions

- Place chicken in the bottom of the crockpot.
- In a bowl, whisk together teriyaki sauce, soy sauce, honey, garlic, ginger, and rice vinegar.
- Pour sauce over the chicken. No need to stir.
- Cover and cook on LOW for 5–6 hours or HIGH for 3–4 hours, until chicken is tender.
- Remove chicken and shred or slice as desired.
- If a thicker sauce is desired, whisk cornstarch with water, stir into crockpot, and cook on HIGH for 10–15 minutes.
- Return chicken to the crockpot and toss to coat.
- Serve over rice, quinoa, or steamed vegetables. Garnish if desired.
