- 8 oz (225g) thick-cut bacon or rashers, chopped
- 1 1/2 lbs (700g) potatoes, peeled and sliced
- 2 large onions, sliced
- 2 cups chicken or beef broth
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tbsp fresh parsley, chopped (optional)

- In a large pot, gently brown the sausages until lightly colored. Remove and slice into chunks.
- In the same pot, add bacon and cook until just beginning to render fat.
- Layer onions, potatoes, sausage pieces, and bacon in the pot.
- Season with salt and black pepper.
- Pour in broth until ingredients are just covered.
- Bring to a gentle simmer, cover, and cook on low heat for 45–60 minutes until potatoes are tender.
- Do not stir—this helps maintain the traditional layered texture.
- Serve hot, garnished with parsley if desired, alongside crusty bread.
Notes
Dublin Coddle is traditionally not stirred and never boiled hard—keep it at a gentle simmer. Leftovers taste even better the next day as the flavors deepen.
