- 4 Irish sausages (pork or beef)
- 6 slices thick-cut bacon, chopped
- 4 medium potatoes, peeled and sliced
- 2 large onions, sliced
- 2 cups chicken or vegetable broth
- 1 tsp fresh thyme leaves
- 1 bay leaf
- Salt and black pepper, to taste
- Fresh parsley, for garnish

- Preheat oven to 325°F (160°C).
- In a large oven-safe pot or Dutch oven, cook bacon over medium heat until lightly browned. Remove and set aside.
- Brown sausages in the same pot for 2–3 minutes per side. Remove and set aside.
- Layer potatoes, onions, bacon, and sausages in the pot, seasoning lightly with salt, pepper, and thyme.
- Pour in broth, ensuring ingredients are partially submerged. Add bay leaf.
- Cover pot with lid and bake in oven for 1.5–2 hours, until potatoes are tender and flavors meld.
- Remove bay leaf, garnish with fresh parsley, and serve hot.
Notes
Traditionally, leftover sausages and bacon can be used. Serve with crusty bread to soak up the delicious broth.
