  • 4 Irish sausages (pork or beef)
  • 6 slices thick-cut bacon, chopped
  • 4 medium potatoes, peeled and sliced
  • 2 large onions, sliced
  • 2 cups chicken or vegetable broth
  • 1 tsp fresh thyme leaves
  • 1 bay leaf
  • Salt and black pepper, to taste
  • Fresh parsley, for garnish

  1. Preheat oven to 325°F (160°C).
  2. In a large oven-safe pot or Dutch oven, cook bacon over medium heat until lightly browned. Remove and set aside.
  3. Brown sausages in the same pot for 2–3 minutes per side. Remove and set aside.
  4. Layer potatoes, onions, bacon, and sausages in the pot, seasoning lightly with salt, pepper, and thyme.
  5. Pour in broth, ensuring ingredients are partially submerged. Add bay leaf.
  6. Cover pot with lid and bake in oven for 1.5–2 hours, until potatoes are tender and flavors meld.
  7. Remove bay leaf, garnish with fresh parsley, and serve hot.

Notes

Traditionally, leftover sausages and bacon can be used. Serve with crusty bread to soak up the delicious broth.
