These no-bake Donkey Balls are chocolate-covered peanut butter bites that are as hilarious as they are delicious. Creamy, sweet, and crunchy, they’re always a hit at parties, gift baskets, or when you’re craving a bite-sized treat.

- 1 cup creamy peanut butter
- 1/4 cup unsalted butter, softened
- 2 cups powdered sugar
- 1 1/2 cups graham cracker crumbs (or crushed Rice Krispies for crunch)
- 1/2 teaspoon vanilla extract
- 1 1/2 cups semi-sweet or milk chocolate chips
- 1 tablespoon coconut oil or shortening (optional, for smooth melting)
Instructions
- Make the Filling: In a large bowl, mix peanut butter, butter, powdered sugar, graham cracker crumbs, and vanilla until fully combined and dough-like.
- Shape into Balls: Roll mixture into 1-inch balls and place on a parchment-lined baking sheet. Freeze for 20–30 minutes.
- Melt the Chocolate: In a microwave-safe bowl, melt chocolate chips with coconut oil in 30-second intervals, stirring in between until smooth.
- Dip & Chill: Dip each frozen ball into melted chocolate using a fork. Tap off excess and return to tray. Refrigerate until set, about 15–20 minutes.
- Serve or Store: Enjoy chilled or at room temperature. Store in an airtight container in the fridge for up to 2 weeks.
Notes
Feel free to add chopped nuts, shredded coconut, or sea salt on top before the chocolate sets. These freeze beautifully for make-ahead treats and also work great as a fun edible gift!
