- 2 lbs beef chuck, cut into 1-inch cubes
- 2 tbsp olive oil
- 4 carrots, sliced
- 3 potatoes, diced
- 2 celery stalks, sliced
- 1 onion, diced
- 3 cloves garlic, minced
- 3 cups beef broth
- 2 tbsp tomato paste
- 1 tsp Worcestershire sauce
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1/2 tsp black pepper
- 1/4 cup all-purpose flour (optional, for thickening)
- Salt to taste

- Heat olive oil in a skillet and sear beef cubes on all sides until browned.
- Place beef in the slow cooker along with carrots, potatoes, celery, onion, and garlic.
- In a bowl, whisk together beef broth, tomato paste, Worcestershire sauce, thyme, rosemary, pepper, and salt.
- Pour mixture over beef and vegetables.
- Cover and cook on LOW for 7–8 hours or HIGH for 4 hours until beef and vegetables are tender.
- Optional: Thicken stew by mixing flour with a little cold water to make a slurry and stir into stew 30 minutes before serving.
- Serve hot with crusty bread or over rice if desired.
Notes
You can add peas or green beans during the last 30 minutes of cooking for extra veggies. Leftovers taste even better the next day.
