  • 8 oz cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 34 cups powdered sugar
  • 1 tsp vanilla extract
  • 12 tbsp milk (if needed for consistency)

Instructions

  1. Preheat oven: Heat oven to 350°F (175°C) and line a 12-cup muffin tin with cupcake liners.
  2. Mix dry ingredients: In a medium bowl, whisk flour, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves.
  3. Mix wet ingredients: In a large bowl, whisk pumpkin puree, oil, granulated sugar, brown sugar, eggs, and vanilla until smooth.
  4. Combine: Gradually add dry ingredients to wet, mixing just until combined.
  5. Bake: Divide batter evenly among cupcake liners. Bake 18–20 minutes, or until a toothpick comes out clean. Cool completely.
  6. Frosting: Beat cream cheese and butter until creamy. Gradually add powdered sugar, mixing until smooth. Mix in vanilla and milk if needed. Frost cooled cupcakes and enjoy.
