- 4 tbsp unsalted butter, melted

- 1/2 tsp black pepper
- 1/2 tsp garlic powder
- 1/2 tsp paprika
- 1 cup low-sodium chicken broth (or vegetable broth for vegan)
- Fresh thyme or rosemary, for garnish
Instructions
- Preheat oven to 425Β°F (220Β°C). Lightly grease a large baking dish or sheet pan.
- In a bowl, whisk together melted butter, olive oil, salt, pepper, garlic powder, and paprika.
- Toss sweet potato rounds in the mixture until evenly coated, then arrange in a single layer on the baking sheet.
- Roast for 20 minutes, flip the rounds, then pour the broth into the pan.
- Continue roasting for 20β25 minutes until the centers are soft and the edges are golden and caramelized.
