- 1/3 cup brown sugar, packed

- 2 tsp vanilla extract
- 1 1/2 cups old-fashioned rolled oats
- 1 cup all-purpose flour
- 1/2 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp cinnamon
- 1/4 tsp salt

- Chocolate chips
- Raisins
- Chopped nuts
- Dried cranberries
Instructions
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- Cream together the butter, honey, and brown sugar until creamy and smooth.
- Mix in the egg and vanilla until well combined.
- In a separate bowl, whisk together oats, flour, baking soda, baking powder, cinnamon, and salt.
- Add dry ingredients to the wet mixture and stir until fully combined. Fold in optional mix-ins if using.
- Scoop 1–2 tbsp portions of dough onto baking sheets, spacing them about 2 inches apart.
- Bake for 10–12 minutes, until edges are lightly golden and centers look soft.
- Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack.
Notes
For chewier cookies, do not overbake—honey keeps them soft! Rolled oats provide the best texture; quick oats may result in a denser cookie. Add chocolate chips or dried fruit for extra flavor. Store in an airtight container for up to 4 days.
