Instructions

  1. Make Rhubarb Syrup: In a saucepan, combine rhubarb, water, and sugar. Bring to a boil, then reduce heat and simmer for 15 minutes until rhubarb breaks down.
  2. Strain: Strain the mixture through a fine mesh sieve into a pitcher, pressing lightly to extract all liquid. Discard solids or save for compote.
  3. Add Lemon Juice: Stir in freshly squeezed lemon juice. Taste and adjust sweetness if needed.
