This Homemade Rhubarb Lemonade is a refreshing, vibrant pink drink made from fresh rhubarb and lemons. Naturally sweet-tart and perfect for summer sipping, it’s a seasonal twist on classic lemonade that’s both beautiful and delicious.

- 4 cups chopped fresh rhubarb
- 4 cups water
- 3/4 to 1 cup granulated sugar (to taste)
- 1 cup freshly squeezed lemon juice (about 4–6 lemons)
- Ice and lemon slices, for serving
Instructions
- Make Rhubarb Syrup: In a saucepan, combine rhubarb, water, and sugar. Bring to a boil, then reduce heat and simmer for 15 minutes until rhubarb breaks down.
- Strain: Strain the mixture through a fine mesh sieve into a pitcher, pressing lightly to extract all liquid. Discard solids or save for compote.
- Add Lemon Juice: Stir in freshly squeezed lemon juice. Taste and adjust sweetness if needed.
- Chill & Serve: Refrigerate until cold. Serve over ice with lemon slices or rhubarb ribbons for garnish.
Notes
Use pink or red rhubarb stalks for the prettiest color. This lemonade can be diluted with sparkling water for a fizzy twist or mixed with vodka for a cocktail version.
