  • 1 onion, diced
  • 3 garlic cloves, minced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 can (15 oz) diced tomatoes
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) black beans, drained and rinsed
  • 2 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • 1/2 tsp cayenne pepper (optional)
  • Salt and pepper, to taste
  • Optional toppings: shredded cheese, sour cream, chopped cilantro, green onions

Instructions

  1. In a large pot, brown the beef over medium-high heat and drain excess fat.
  2. Add onion, garlic, and bell peppers. Sauté 4–5 minutes until softened.
  3. Stir in chili powder, cumin, smoked paprika, cayenne, salt, and pepper. Cook 1–2 minutes to release flavors.
  4. Add diced tomatoes and beans. Bring to a boil, then reduce heat and simmer for 25–30 minutes, stirring occasionally.
  5. Adjust seasoning as needed. Serve hot with optional toppings for extra flavor.
