  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1/2 cup frozen peas
  • 1/4 cup all-purpose flour
  • 2 cups chicken broth
  • 1 cup milk or heavy cream
  • 2 cups cooked shredded chicken
  • 1 teaspoon dried thyme
  • Salt and black pepper to taste
  • 1/2 cup shredded cheddar cheese (optional)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Melt butter in a large skillet over medium heat.
  3. Sauté onion, garlic, carrots, and celery until softened, about 5 minutes.
  4. Sprinkle flour over vegetables and stir to form a roux; cook 1–2 minutes.
  5. Slowly whisk in chicken broth and milk/cream, stirring until thickened.
  6. Add shredded chicken, peas, thyme, salt, and pepper; stir to combine.
  7. Transfer mixture to a greased baking dish and smooth the top.
  8. Sprinkle cheddar cheese on top if using.
  9. Bake for 20–25 minutes until bubbly and lightly golden.
  10. Let rest 5 minutes before serving. Enjoy warm!
