- 1 small onion, diced
- 2 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 1/2 cup frozen peas
- 1/4 cup all-purpose flour
- 2 cups chicken broth
- 1 cup milk or heavy cream
- 2 cups cooked shredded chicken
- 1 teaspoon dried thyme
- Salt and black pepper to taste
- 1/2 cup shredded cheddar cheese (optional)
Instructions
- Preheat oven to 375°F (190°C).
- Melt butter in a large skillet over medium heat.
- Sauté onion, garlic, carrots, and celery until softened, about 5 minutes.
- Sprinkle flour over vegetables and stir to form a roux; cook 1–2 minutes.
- Slowly whisk in chicken broth and milk/cream, stirring until thickened.
- Add shredded chicken, peas, thyme, salt, and pepper; stir to combine.
- Transfer mixture to a greased baking dish and smooth the top.
- Sprinkle cheddar cheese on top if using.
- Bake for 20–25 minutes until bubbly and lightly golden.
- Let rest 5 minutes before serving. Enjoy warm!
