Instructions

  1. Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. Cream together the softened butter and sugar until light and fluffy.
  3. Add the egg, vanilla, and almond extract; mix until fully combined.
  4. In a separate bowl, whisk flour, baking powder, baking soda, and salt.
  5. Gradually add dry ingredients to the wet mixture and mix until a soft dough forms.
  6. Scoop large dough balls (about 3 tablespoons each) and gently flatten the tops to create thick cookies.
  7. Bake for 10–12 minutes, or until edges are set but centers are still soft.
  8. Let cookies cool completely before frosting.
  9. To make the frosting, beat butter until creamy, then add powdered sugar, vanilla, almond extract, and cream.
  10. Whip until smooth and fluffy; add food coloring if desired.
