  • 6 large bell peppers, tops cut off and seeds removed
  • 1 lb ground beef or turkey
  • 1 cup cooked rice
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes, drained
  • 1 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 cup shredded mozzarella cheese
  • Fresh parsley for garnish

  1. In a skillet, cook ground beef with onion and garlic until browned; drain excess fat.
  2. Stir in cooked rice, diced tomatoes, Italian seasoning, salt, and pepper.
  3. Stuff each bell pepper with the beef and rice mixture.
  4. Place stuffed peppers upright in the crockpot.
  5. Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours.
  6. Sprinkle mozzarella cheese on top during the last 15 minutes of cooking.
  7. Garnish with parsley and serve warm.

Notes

You can substitute quinoa for rice for a healthier option. Add a few dashes of hot sauce for a little heat.
