- 6 large bell peppers, tops cut off and seeds removed
- 1 lb ground beef or turkey
- 1 cup cooked rice
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes, drained
- 1 tsp Italian seasoning
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1 cup shredded mozzarella cheese
- Fresh parsley for garnish

- In a skillet, cook ground beef with onion and garlic until browned; drain excess fat.
- Stir in cooked rice, diced tomatoes, Italian seasoning, salt, and pepper.
- Stuff each bell pepper with the beef and rice mixture.
- Place stuffed peppers upright in the crockpot.
- Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours.
- Sprinkle mozzarella cheese on top during the last 15 minutes of cooking.
- Garnish with parsley and serve warm.
Notes
You can substitute quinoa for rice for a healthier option. Add a few dashes of hot sauce for a little heat.
