  • 16 oz Velveeta cheese, cubed
  • 8 oz cream cheese, cubed
  • 1 lb ground beef or sausage, cooked and drained
  • 1 can (10 oz) Rotel diced tomatoes with green chilies, undrained
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • 1/2 tsp garlic powder
  • Optional: diced jalapeños or hot sauce for extra heat

  1. Brown ground beef or sausage in a skillet over medium heat. Drain excess grease.
  2. Add Velveeta, cream cheese, cooked meat, Rotel, and seasonings to the crockpot.
  3. Cover and cook on LOW for 2–3 hours or HIGH for 1–1½ hours, stirring occasionally.
  4. Once cheese is fully melted and smooth, switch to WARM setting.
  5. Serve hot with tortilla chips.

Notes

Stir occasionally to prevent sticking. This queso can be kept warm for hours in the crockpot. Add cooked chorizo or black beans for variation.
