- 16 oz Velveeta cheese, cubed
- 8 oz cream cheese, cubed
- 1 lb ground beef or sausage, cooked and drained
- 1 can (10 oz) Rotel diced tomatoes with green chilies, undrained
- 1 tsp chili powder
- 1/2 tsp cumin
- 1/2 tsp garlic powder
- Optional: diced jalapeños or hot sauce for extra heat

- Brown ground beef or sausage in a skillet over medium heat. Drain excess grease.
- Add Velveeta, cream cheese, cooked meat, Rotel, and seasonings to the crockpot.
- Cover and cook on LOW for 2–3 hours or HIGH for 1–1½ hours, stirring occasionally.
- Once cheese is fully melted and smooth, switch to WARM setting.
- Serve hot with tortilla chips.
Notes
Stir occasionally to prevent sticking. This queso can be kept warm for hours in the crockpot. Add cooked chorizo or black beans for variation.
