- 2 pounds baby potatoes, halved or quartered

- 1/2 cup grated Parmesan cheese

Instructions
- Prep potatoes: Wash and halve or quarter baby potatoes for even cooking.
- Combine ingredients: In a large bowl, toss potatoes with olive oil, Parmesan cheese, garlic, rosemary, salt, and pepper.
- Cook in crockpot: Transfer mixture to crockpot and cook on low for 4-5 hours or until potatoes are tender and golden.
- Finish and serve: Stir gently, garnish with fresh parsley if desired, and serve warm.
Notes
For extra crispiness, transfer cooked potatoes to a baking sheet and broil for 3-5 minutes before serving.
