- 1 1/2 lbs steak (sirloin or ribeye), cut into bite-sized pieces
- 4 medium potatoes, diced
- 1 small onion, diced
- 3 cloves garlic, minced
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1/4 cup beef broth
- 1 tsp paprika
- 1/2 tsp salt (or to taste)
- 1/4 tsp black pepper
- Optional: chopped green onions or parsley for garnish

- Place diced potatoes, onion, and garlic in the bottom of the crockpot.
- Season steak pieces with salt, pepper, and paprika, then layer on top of the potatoes.
- Pour beef broth over the top.
- Cover and cook on low for 6–7 hours or high for 3–4 hours until steak is tender and potatoes are cooked through.
- About 30 minutes before serving, stir in shredded cheddar cheese and sour cream until melted and creamy.
- Garnish with chopped green onions or parsley if desired and serve warm.
Notes
For extra flavor, you can add mushrooms or bell peppers. Use Yukon Gold potatoes for a creamier texture.
