Ingredients

  • 4 large yellow onions, thinly sliced
  • 3 tbsp butter
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 cloves garlic, minced
  • 1 tsp sugar
  • 8 cups beef broth
  • 1/2 cup dry white wine (optional)
  • 1 tbsp Worcestershire sauce
  • 1 tsp fresh thyme or 1/2 tsp dried thyme
  • Baguette slices, toasted
  • 1 1/2 cups grated Gruyère cheese

Instructions

  1. Melt butter with olive oil in a large skillet over medium heat. Add onions, salt, and sugar; cook until deeply caramelized, about 30 minutes.
  2. Transfer onions to crockpot. Add garlic, beef broth, wine, Worcestershire sauce, and thyme. Stir well.
  3. Cover and cook on LOW for 6–8 hours, or on HIGH for 3–4 hours.
  4. Preheat broiler. Ladle soup into oven-safe bowls, top with toasted baguette slices, and sprinkle Gruyère cheese generously.
  5. Broil until cheese is bubbly and golden. Serve hot.

Notes

You can substitute beef broth with vegetable broth for a lighter version. For a richer flavor, let the soup sit for a few hours before serving.
