- 4 large yellow onions, thinly sliced
- 3 tbsp butter
- 1 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 2 cloves garlic, minced
- 1 tsp sugar
- 8 cups beef broth
- 1/2 cup dry white wine (optional)
- 1 tbsp Worcestershire sauce
- 1 tsp fresh thyme or 1/2 tsp dried thyme
- Baguette slices, toasted
- 1 1/2 cups grated Gruyère cheese
Instructions
- Melt butter with olive oil in a large skillet over medium heat. Add onions, salt, and sugar; cook until deeply caramelized, about 30 minutes.
- Transfer onions to crockpot. Add garlic, beef broth, wine, Worcestershire sauce, and thyme. Stir well.
- Cover and cook on LOW for 6–8 hours, or on HIGH for 3–4 hours.
- Preheat broiler. Ladle soup into oven-safe bowls, top with toasted baguette slices, and sprinkle Gruyère cheese generously.
- Broil until cheese is bubbly and golden. Serve hot.
Notes
You can substitute beef broth with vegetable broth for a lighter version. For a richer flavor, let the soup sit for a few hours before serving.
