  • 1 lb ground beef
  • 1/2 lb ground pork (optional for juiciness)
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste
  • 2 large onions, thinly sliced
  • 3 cloves garlic, minced
  • 2 cups beef broth
  • 1/2 cup French onion soup mix
  • 1 tsp Worcestershire sauce
  • 1 tbsp cornstarch mixed with 2 tbsp water (optional, for thickening)

  1. In a bowl, combine ground beef, ground pork, breadcrumbs, Parmesan, egg, garlic powder, onion powder, salt, and pepper. Mix until combined and form into 1–2 inch meatballs.
  2. Place meatballs in the crockpot.
  3. In a skillet, sauté onions and garlic until soft and lightly caramelized (optional but adds flavor).
  4. Transfer onions and garlic to the crockpot over the meatballs.
  5. Pour beef broth over everything, sprinkle French onion soup mix, and add Worcestershire sauce.
  6. Cover and cook on LOW for 5–6 hours or HIGH for 3–4 hours.
  7. If desired, mix cornstarch with water and stir into sauce 15–20 minutes before serving to thicken.
  8. Serve meatballs with sauce over rice, mashed potatoes, or noodles.

Notes

You can substitute turkey or chicken for a lighter version. Add mushrooms for extra flavor. Leftovers taste even better the next day.
