- 3 lbs beef roast (chuck or sirloin)
- 1 medium onion, sliced
- 3 cloves garlic, minced
- 1 1/2 cups beef broth
- 1 tbsp Worcestershire sauce
- 1 tsp dried thyme
- 1/2 tsp black pepper
- 1/2 tsp salt
- 8 sandwich rolls or French rolls
- Optional: provolone cheese slices

- Place sliced onion and garlic at the bottom of the crockpot.
- Season the beef roast with salt, pepper, and thyme, then place on top of onions.
- Pour beef broth and Worcestershire sauce over the roast.
- Cover and cook on LOW for 8 hours or HIGH for 4–5 hours until the beef is tender and shreds easily.
- Remove beef and shred with two forks. Return shredded beef to the crockpot to soak in juices.
- Slice rolls and optionally add provolone cheese.
- Assemble sandwiches with shredded beef and serve hot with au jus from the crockpot for dipping.
Notes
For extra flavor, sear the roast in a skillet before placing in the crockpot. You can also add a splash of soy sauce or garlic powder to the au jus for depth.
