  • 2 lbs beef roast (chuck or rump), cut into chunks
  • 1 small onion, sliced
  • 3 cloves garlic, minced
  • 1 cup cranberry sauce (jellied or whole berry)
  • 1/2 cup beef broth
  • 2 tbsp soy sauce
  • 1 tbsp Worcestershire sauce
  • 1 tsp dried thyme
  • 1/2 tsp salt (or to taste)
  • 1/4 tsp black pepper
  • Optional: chopped parsley for garnish

  1. Place beef chunks and sliced onion in the crockpot.
  2. In a small bowl, mix cranberry sauce, beef broth, soy sauce, Worcestershire sauce, garlic, thyme, salt, and pepper.
  3. Pour the sauce over the beef and onions.
  4. Cover and cook on low for 7–8 hours or on high for 4–5 hours, until beef is tender.
  5. Shred or slice beef as desired and stir gently to coat with sauce.
  6. Garnish with chopped parsley before serving, if desired.
  7. Serve with mashed potatoes, rice, or crusty bread.

Notes

For extra flavor, add a splash of balsamic vinegar or a pinch of red pepper flakes. Leftovers taste great the next day and can be frozen for later.
