- 2 lbs boneless, skinless chicken breasts
- 1 (1 oz) packet ranch seasoning mix
- 8 oz cream cheese, cubed
- 1 cup shredded cheddar cheese
- 6 slices bacon, cooked and crumbled
- 1/4 cup chopped green onions (optional, for garnish)
- Salt and pepper, to taste
- Buns, lettuce wraps, or rice (for serving)
Instructions
- Layer chicken: Place chicken breasts in the bottom of the crockpot. Sprinkle ranch seasoning over the top, then layer with cream cheese cubes.
- Cook: Cover and cook on low for 6–7 hours or high for 3–4 hours, until chicken is fully cooked and tender.
- Shred: Shred the chicken in the crockpot using two forks and mix well with the melted cream cheese and juices.
- Add cheese & bacon: Stir in shredded cheddar and crumbled bacon. Cover for another 5–10 minutes until cheese melts.
- Serve: Garnish with chopped green onions and serve warm on buns, over rice, or in lettuce wraps.
Notes
For a lighter version, use reduced-fat cream cheese and skip the bacon. This dish is keto-friendly and can be stored in the fridge for up to 4 days or frozen for later.
