  • 1 onion, diced
  • 3 garlic cloves, minced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 2 cans (15 oz each) diced tomatoes
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) black beans, drained and rinsed
  • 2 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • 1/2 tsp cayenne pepper (optional)
  • Salt and pepper, to taste
  • Optional toppings: shredded cheese, sour cream, chopped green onions

Instructions

  1. In a skillet, brown the ground meat over medium heat. Drain excess fat.
  2. Add the meat to a slow cooker along with onion, garlic, and bell peppers.
  3. Stir in diced tomatoes, beans, chili powder, cumin, smoked paprika, cayenne, salt, and pepper.
  4. Cover and cook on low for 6–8 hours or high for 3–4 hours.
  5. Stir occasionally. Adjust seasoning to taste before serving.
  6. Serve hot with your favorite toppings.

Notes

For extra depth of flavor, add a splash of beer or a tablespoon of tomato paste. This chili can be made ahead and tastes even better the next day.
