- 1 lb (450g) ground beef or turkey
- 1 onion, diced
- 3 garlic cloves, minced
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 2 cans (15 oz each) diced tomatoes
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) black beans, drained and rinsed
- 2 tbsp chili powder
- 1 tsp cumin
- 1 tsp smoked paprika
- 1/2 tsp cayenne pepper (optional)
- Salt and pepper, to taste
- Optional toppings: shredded cheese, sour cream, chopped green onions
Instructions
- In a skillet, brown the ground meat over medium heat. Drain excess fat.
- Add the meat to a slow cooker along with onion, garlic, and bell peppers.
- Stir in diced tomatoes, beans, chili powder, cumin, smoked paprika, cayenne, salt, and pepper.
- Cover and cook on low for 6–8 hours or high for 3–4 hours.
- Stir occasionally. Adjust seasoning to taste before serving.
- Serve hot with your favorite toppings.
Notes
For extra depth of flavor, add a splash of beer or a tablespoon of tomato paste. This chili can be made ahead and tastes even better the next day.
