- 1 lb boneless, skinless chicken breasts
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (14.5 oz) diced tomatoes
- 1 small onion, diced
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 tsp chili powder
- 1 tsp cumin
- 1/2 tsp paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- Juice of 1 lime
- Tortilla strips, shredded cheese, avocado, and cilantro for garnish

- Place chicken, black beans, corn, diced tomatoes, onion, garlic, chili powder, cumin, paprika, salt, and pepper into the slow cooker.
- Pour chicken broth over the ingredients and stir to combine.
- Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours until chicken is cooked through.
- Remove chicken, shred with two forks, and return to the soup.
- Stir in lime juice.
- Serve hot with tortilla strips, shredded cheese, avocado, and cilantro on top.
Notes
For a thicker soup, remove 1/2 cup of broth and blend until smooth, then return to the crockpot. Adjust spice level to taste.
