- 1 1/2 lbs boneless, skinless chicken breasts
- 1 (9 oz) package cheese tortellini (fresh or frozen)
- 1 (10.5 oz) can cream of chicken soup
- 1 (8 oz) package cream cheese, softened
- 1 cup chicken broth
- 1 cup shredded mozzarella cheese
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp black pepper
- Optional: chopped parsley or basil for garnish

- Place chicken breasts in the bottom of the crockpot.
- In a bowl, mix cream of chicken soup, cream cheese, chicken broth, garlic powder, onion powder, and pepper.
- Pour mixture over the chicken.
- Cover and cook on LOW for 4–5 hours or HIGH for 2–3 hours, until chicken is cooked through.
- Remove chicken and shred it with two forks, then return to the crockpot.
- Add cheese tortellini and stir gently.
- Cover and cook an additional 20–25 minutes until tortellini is tender.
- Stir in shredded mozzarella cheese until melted.
- Garnish with parsley or basil and serve hot.
Notes
Use fresh tortellini for best results. You can add vegetables like spinach or peas for extra nutrition. Leftovers reheat well in the microwave or on the stovetop.
