- 2 lbs boneless, skinless chicken breasts
- 1 bag (16 oz) frozen mixed vegetables
- 1 small onion, diced
- 2 cloves garlic, minced
- 2 cans (10.5 oz each) cream of chicken soup
- 1 cup chicken broth
- 1/2 cup milk or heavy cream
- 1 tsp dried thyme
- 1/2 tsp black pepper
- Salt to taste
- 1 can refrigerated biscuits or puff pastry (for serving)

- Place chicken in the bottom of the crockpot.
- Add frozen vegetables, onion, and garlic.
- In a bowl, whisk cream of chicken soup, chicken broth, milk, thyme, salt, and pepper.
- Pour mixture over the ingredients.
- Cover and cook on LOW for 5–6 hours or HIGH for 3–4 hours.
- Remove chicken, shred, and return to crockpot.
- Stir well and cook 10 more minutes.
- Bake biscuits or pastry separately and serve on top.
Notes
For a thicker filling, stir in a cornstarch slurry during the last 15 minutes. You can substitute rotisserie chicken for faster prep.
