- 2 lbs boneless, skinless chicken breasts
- 3 cups potatoes, diced
- 1 can (15 oz) corn, drained
- 1 small onion, diced
- 2 cloves garlic, minced
- 3 cups chicken broth
- 1 cup heavy cream or half-and-half
- 1 tsp thyme
- 1/2 tsp paprika
- Salt and black pepper to taste
- Optional: shredded cheddar cheese, chopped parsley for garnish

- Pour in chicken broth and add thyme, paprika, salt, and pepper.
- Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours until chicken and potatoes are tender.
- Remove chicken, shred it, and return it to the crockpot.
- Stir in heavy cream and cook on HIGH for 10–15 minutes until heated through.
- Optional: top with shredded cheese and parsley before serving.
Notes
For a thicker chowder, mash some of the potatoes or stir in a cornstarch slurry. You can also add carrots or celery for extra veggies.
