- 2 lbs russet or Yukon gold potatoes, diced
- 14 oz kielbasa sausage, sliced
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 can (10.5 oz) cream of chicken soup
- 1/2 cup milk
- 2 cups shredded cheddar cheese
- 1/2 tsp paprika
- 1/2 tsp black pepper
- Salt to taste
- Optional: chopped parsley or green onions for garnish

- Lightly grease the crockpot.
- Add diced potatoes, kielbasa, onion, and garlic.
- In a bowl, mix cream of chicken soup, milk, paprika, salt, and pepper.
- Pour sauce mixture over the ingredients and stir gently.
- Cover and cook on LOW for 5–6 hours or HIGH for 3–4 hours until potatoes are tender.
- Stir in shredded cheese during the last 20 minutes of cooking.
- Cover again until cheese is fully melted.
- Garnish and serve hot.
Notes
You can add bell peppers or broccoli for extra veggies. For extra creaminess, stir in a little sour cream before serving.
