This Crockpot Cheeseburger Soup is creamy, cheesy, and packed with classic burger flavor. Made with ground beef, potatoes, veggies, and melted cheddar, it’s the perfect cozy bowl for chilly nights or game day meals.

- 1 lb ground beef
- 1/2 onion, chopped
- 2 cloves garlic, minced
- 3 cups peeled and diced potatoes
- 2 carrots, diced
- 2 celery stalks, chopped
- 3 cups chicken broth
- 1 tsp Worcestershire sauce
- 1 tsp dried parsley
- 1/2 tsp salt (or to taste)
- 1/2 tsp black pepper
- 2 tbsp butter
- 2 tbsp all-purpose flour
- 1 cup milk
- 2 cups shredded cheddar cheese
- Optional toppings: cooked bacon, pickles, green onions
Instructions
- Brown beef: In a skillet, cook ground beef with onion and garlic until browned. Drain fat.
- Transfer to slow cooker: Add cooked beef, potatoes, carrots, celery, broth, Worcestershire sauce, parsley, salt, and pepper.
- Cook: Cover and cook on low for 6–7 hours or high for 3–4 hours, until potatoes are tender.
- Make cheese sauce: In a saucepan, melt butter, whisk in flour, then slowly whisk in milk. Stir until thickened, then mix in shredded cheese until smooth.
- Combine: Stir cheese sauce into the crockpot. Mix well and cook on high for another 15–20 minutes.
- Serve: Ladle into bowls and top with bacon, pickles, or green onions if desired.
Notes
Make it keto by swapping the potatoes for cauliflower. Use sharp cheddar for bold flavor, or mix in Velveeta for extra creaminess.
