Description

This Crockpot Cheeseburger Soup is creamy, cheesy, and loaded with ground beef, potatoes, and vegetables. A hearty, comforting slow cooker meal that’s perfect for the whole family.


Ingredients

  • 1 lb ground beef
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 4 medium potatoes, peeled and diced
  • 2 carrots, diced
  • 3 cups chicken or beef broth
  • 2 cups shredded cheddar cheese
  • 1 cup milk or half-and-half
  • 1/2 cup sour cream
  • 1 tbsp Worcestershire sauce
  • 1 tsp Dijon mustard
  • Salt and black pepper to taste
  • Optional: green onions or bacon bits for garnish

Instructions

  1. In a skillet, cook ground beef until browned. Drain excess fat and transfer to the crockpot.
  2. Add diced onion, garlic, potatoes, carrots, and broth to the crockpot. Stir well.
  3. Cover and cook on low for 6–7 hours or high for 3–4 hours until potatoes are tender.
  4. Stir in shredded cheddar cheese, milk, sour cream, Worcestershire sauce, and Dijon mustard until smooth and creamy.
  5. Season with salt and pepper to taste.
  6. Serve hot, garnished with green onions or bacon bits if desired.

Notes

For a lighter version, substitute ground turkey and low-fat cheese. This soup is great for meal prep and reheats well.
