- 1 lb ground beef
- 1 onion, diced
- 2 cloves garlic, minced
- 4 medium potatoes, peeled and diced
- 2 carrots, diced
- 3 cups chicken or beef broth
- 2 cups shredded cheddar cheese
- 1 cup milk or half-and-half
- 1/2 cup sour cream
- 1 tbsp Worcestershire sauce
- 1 tsp Dijon mustard
- Salt and black pepper to taste
- Optional: green onions or bacon bits for garnish
Instructions
- In a skillet, cook ground beef until browned. Drain excess fat and transfer to the crockpot.
- Add diced onion, garlic, potatoes, carrots, and broth to the crockpot. Stir well.
- Cover and cook on low for 6–7 hours or high for 3–4 hours until potatoes are tender.
- Stir in shredded cheddar cheese, milk, sour cream, Worcestershire sauce, and Dijon mustard until smooth and creamy.
- Season with salt and pepper to taste.
- Serve hot, garnished with green onions or bacon bits if desired.
Notes
For a lighter version, substitute ground turkey and low-fat cheese. This soup is great for meal prep and reheats well.
