- 1 onion, chopped
- 3 medium potatoes, thinly sliced
- 2 carrots, sliced
- 1 cup frozen corn
- 1 cup frozen green beans
- 1 can (15 oz) diced tomatoes
- 1 can (8 oz) tomato sauce
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp paprika
- 1/2 tsp garlic powder

- Brown ground beef in a skillet and drain fat.
- Layer half of the potatoes in the crock pot.
- Add half of carrots, corn, green beans, and onion.
- Top with half of the beef.
- Repeat layers.
- Pour tomatoes and tomato sauce over top.
- Season with salt, pepper, paprika, and garlic powder.
- Cover and cook on LOW for 7–8 hours or HIGH for 4 hours until tender.
Notes
Add cabbage or bell peppers for extra flavor. This stew reheats beautifully and tastes even better the next day.
