  • 1 lb ground beef
  • 1 onion, chopped
  • 3 medium potatoes, thinly sliced
  • 2 carrots, sliced
  • 1 cup frozen corn
  • 1 cup frozen green beans
  • 1 can (15 oz) diced tomatoes
  • 1 can (8 oz) tomato sauce
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp paprika
  • 1/2 tsp garlic powder

  1. Brown ground beef in a skillet and drain fat.
  2. Layer half of the potatoes in the crock pot.
  3. Add half of carrots, corn, green beans, and onion.
  4. Top with half of the beef.
  5. Repeat layers.
  6. Pour tomatoes and tomato sauce over top.
  7. Season with salt, pepper, paprika, and garlic powder.
  8. Cover and cook on LOW for 7–8 hours or HIGH for 4 hours until tender.

Notes

Add cabbage or bell peppers for extra flavor. This stew reheats beautifully and tastes even better the next day.
