- 4 boneless or bone-in pork chops (about 1-inch thick)
- 1 (10.5 oz) can cream of mushroom soup
- 1 (1 oz) packet onion soup mix
- 1/2 cup low-sodium chicken broth
- 1 tbsp olive oil
- Salt and pepper, to taste
- 1 tbsp cornstarch + 2 tbsp water (optional, to thicken sauce)
- Fresh parsley for garnish (optional)
Instructions
- Season pork chops: Pat pork chops dry and season both sides with salt and pepper.
- Sear (optional): Heat olive oil in a skillet over medium-high heat and sear pork chops for 1–2 minutes per side until lightly browned.
- Layer in crock pot: Place pork chops in the bottom of the crockpot.
- Mix sauce: In a bowl, combine cream of mushroom soup, onion soup mix, and chicken broth. Pour over the pork chops.
- Cook: Cover and cook on low for 6–7 hours or high for 3–4 hours until pork chops are tender.
- Thicken (optional): Mix cornstarch with water and stir into the sauce during the last 30 minutes if you want a thicker gravy.
- Serve: Garnish with parsley and serve over mashed potatoes, rice, or egg noodles.
Notes
Bone-in pork chops tend to stay more moist, but boneless works too. You can skip searing for convenience. Store leftovers in an airtight container in the fridge for up to 3 days.
